Fish Cake Recipe with Mushy Peas – As seen on The Voice Kids

Makes 8

Ingredients:
500g Red Delight potatoes, peeled, diced
1 can Homebrand Mackerel in Oil – drained
2 tbs chopped continental parsley
2 tsp Woolworths Select Dijon mustard
1 lemon, rind finely grated, juiced
125g can Woolworths Select corn kernels – drained
500g Woolworths Select frozen peas
50g Woolworths Select creamy Tasmanian butter
1⁄2 cup Homebrand plain flour
1 tsp Woolworths Select smoked paprika
1 Woolworths Select free range egg
2 tbs Woolworths full cream milk
Vegetable oil, for frying
Chopped fresh continental parsley, to serve

Method:
1. Line a tray with baking paper. Boil potatoes for 10 minutes or until tender. Drain well and return to saucepan. Add mustard, lemon rind and 1 tbs of lemon juice. Mash until smooth. Remove skin and bones from mackerel and crumble fish into mash. Add corn and parsley, mix together well. Form into small patties or balls (or both if you have varying ages sitting at your dining table) and place onto tray. Chill for 30 minutes.

2. Meanwhile, place the peas into a smaller saucepan with 1⁄3 cup of water. Cook over high heat for 5 minutes until soft and bright green then puree using a stick blender. Stir in butter and season. Cover and keep warm.

3. Combine flour and paprika on a plate. Whisk egg with milk in a small bowl and brush over both sides of fish cake. Coat in flour. Heat oil in a frying pan over medium-high heat, add cakes in batches and fry on both sides for about 3 minutes or until golden. Serve with peas and parsley.

Tip 1: These fish cakes freeze either cooked or uncooked. Prepare a larger batch then pop them aside for later use.
Tip 2: Simply alter the size of the patties you make to suit your family. This recipe will make 8-10 adult sized patties of about 1/2 cup each.
