Easy Peas-y Chicken Stir Fry Recipe in Lettuce Cups – As seen on The Voice Kids

Healthy chicken stir fry recipe for the kids. Add some grated fresh ginger for a healthy kick or swap chicken for ground meat for a san choy bau recipe. As seen on The Voice Kids.

Preparation Time: 30mins
Makes 6

1 lettuce, iceberg or baby cos
Ice, for crisping lettuce
1 carrot
150g fresh snow peas
350g Macro Chicken free range stir-fry strips
1 tbsp sesame oil
3/4 cup Woolworths Select frozen peas
3 tbs Woolworths Select soy garlic and honey Sauce
Water, for stir frying
2 tsp sesame seeds, plus extra to garnish

1. Prepare the lettuce by washing and discarding the outer leaves. Carefully peel back the firmer inner leaves to use for your cups. Place in iced water for 10mins to crisp up. Remove before you’re about to serving and drain on paper towel.
2. Peel and finely slice carrot into pieces about 3cm long and top and tail the snow peas then cut in half and set aside. Cut the chicken strips into smaller lengths if needed.
3. Heat the sesame oil in a wok or frypan then add the chicken. Fry for 3-4 minutes or until golden, set aside. Add carrots and stir fry for a couple of minutes, add the snow peas and peas and fry for 1 minute using small amounts of water to lubricate the pan when needed.
4. Add the chicken back to the pan and add the Soy Honey and Garlic Sauce and sesame seeds then stir through until heated.
Spoon the mixture into lettuce cups and top with a sprinkle of sesame seeds

Tip 1: Any nice outer lettuce leaves can be finely shredded and combined with any leftover stir fry mix for a yummy lunchbox salad the next day
Tip 2: Add some grated fresh ginger for a healthy kick
Tip 3: Switch out chicken for any protein and even make a more san choy bau style dish with ground meat
