Easy Fried Rice Recipe with Chicken - Woolworths Fresh Ideas Kids

This chicken fried rice recipe is an easy Chinese food recipe – if you’re short on time use Woolworths Microwave Brown Rice.

Cook rice, spread onto a tray and refrigerate, uncovered, for 10 minutes to chill and dryout. Add eggs to wok to make an omelette, tip onto board roll up and slice. Reheat same wok, stirfry the bacon and vegetables, add rice and shredded bbq chicken, Add egg, bean shoots and some soy.

Ingredients:
1 cup Woolworths Macro Organic brown rice
½ Macro whole food market free-range roast chicken
3 spring onion shallots, thinly sliced
½ red capsicum, diced
1 bunch broccolini, chopped
1½ cups shredded kale leaves
½ cup Woolworths Select frozen baby peas
4 teaspoons Woolworths Select vegetable oil
2 Woolworths Select free range eggs, lightly beaten
125g Woolworths Select rindless short cut bacon, chopped
1 cup bean shoots, soaked in cold water
¼ cup coarsely chopped fresh continental parsley
1 tablespoon Woolworths Select soy sauce

Method
1. Cook the rice following packet directions. Drain. Rinse under cold water to cool completely. Drain well. Spread the rice on a baking tray. Refrigerate, uncovered for 10 minutes or up to 2 hours. Meanwhile, remove the chicken meat from the bones, discard the skin and bones, shred the chicken. Prepare the vegetables into a large bowl.
2. Heat a wok over medium heat. Add 1 teaspoon oil. Swirl to coat. Add the eggs. Swirl to cover base of wok. Cook for 30 seconds or until just set. Transfer to a board and roll up like Swiss roll. Slice and set aside.
3. Increase heat to high. Add remaining oil in wok with the bacon, stir-fry for 1-2 minutes or until lightly browned. Add vegetables. Stir-fry for 1 minute. Add rice and chicken meat. Stir-fry for 2-3 minutes or until rice is heated through. Stir through egg, bean shoots, parsley and soy sauce. Serve.

Tip1: Make sure you use chilled rice in this recipe. It will be gluggy unless the cooked rice has been refrigerated.
Tip2: If you want a saucier rice don’t be tempted to add it while cooking as the liquid will make it soggy, instead serve extra sauces such as oyster, kecap manis and sweet chilli sauce to the side.
Tip3: If you’re short on time use Woolworths Select Microwave Brown Rice. Great for lunchboxes or as a filling in wraps.
