Coconut Fish Finger Recipe with Pineapple Salsa – As seen on The Voice Kids

A healthy twist on a favourite kids recipe. Serve this fish with home made veggie chips for a fun and flavourful twist on classic fish and chips. As seen on The Voice Kids.

Makes 16

Ingredients:
4 fish fillets (450gm), firm white fish such as nile perch or basa 1 cup macro shredded coconut 1/2 cup raw cashew nuts 2 large eggs 3 tablespoon rice flour Salsa 1 large banana, peeled 1 cup pineapple (fresh or tinned) roughly chopped 1/4 cup mint, finely sliced
2 tbsp Lime juice
Lime wedges, for serving (optional)

Method:
1. Preheat oven to 250c. In a food processor, pulse cashew nuts and half the coconut together until they resemble fine crumbs. Transfer to a shallow bowl, add the remaining coconut, season with salt and pepper and set aside.
Measure the rice flour onto a dinner plate and set aside. In another shallow bowl, lightly beat the eggs and set aside.

2. Pat the fish dry with paper towel and slice into strips (1cm x 4cm). Toss in rice flour then lay on a lined baking tray. Working in batches, dip fish pieces in egg mix to coat completely then lift out and shake off excess. Cover in coconut and nut mixture. Lay on prepared baking sheet. Bake for 10-12 minutes, or until it is golden and crunchy.

3. While your fish bakes prepare your salsa. Peel and chop the banana into small pieces, peel (if using fresh) and chop the pineapple, retaining a small amount of the juice, and combine with the banana in a small bowl. Finely slice the mint and fold through the banana and pineapple then finish with lime juice.
To serve top your delicious fish fingers with the pineapple-banana salsa and enjoy.

Tip 1: For nut free simply remove the cashews and either replace with extra coconut or with breadcrumbs
Tip 2: Serve this fish with home made veggie chips for a fun and flavourful twist on classic fish and chips
Tip 3: You can substitute frozen shelled prawns for the fish for a Caribbean style lunch.
