Chicken Alphabet Soup Recipe – Kids Love It!

Kids can have a spelling bee and dinner when you serve this recipe that’s packed with nutrients.

Ingredients

* 2 teaspoons olive oil
* 1 cup sliced leek
* 1 cup sliced baby carrots
* 1/2 cup chopped green bell pepper
* 1/2 cup chopped celery
* 3/4 cup water
* 3 (14 1/2-ounce) cans fat-free, less-sodium chicken broth
* 2/3 cup uncooked alphabet pasta
* 2 cups chopped cooked chicken
* 2 tablespoons chopped fresh basil
* 1 tablespoon chopped fresh oregano
* 1/4 teaspoon black pepper

Preparation

Heat oil over medium heat in a Dutch oven. Add leek and next 3 ingredients; sauté until tender. Add water and broth. Bring to a boil; add pasta, and cook 5 minutes or until pasta is done. Stir in chicken and remaining ingredients.

  2. @gmed2 There are quite a few brands on the market. For example, DaVinci (sold at local supermarkets) and Up & Up Little Meals (sold at Target). You can also order them online.
